Peanut Butter Cookie Recipes

Whenever I was a kid and would go to my grandmother's home, she would always make me peanut butter cookies. As I grew up and started to appreciate more the love and effort put into these cookies, I asked her for the recipe. My family has used this peanut butter cookie recipe for years and I'm passing it along to anyone who wants to try it. It makes about 5 dozen delicious peanut butter cookies.

Ingredients

1/2 cup tightly packed brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine
1 egg
1 heaping cup of peanut butter (smooth or crunchy)
1/2 teaspoon vanilla extract
1 & 1/2 cups sifted AP flour
1/2 teaspoon salt
1/2 teaspoon baking soda

Preheat oven to 375°. In a large bowl combine the sugars and butter. Beat until creamy. Add the egg, peanut butter and vanilla extract, beating until well combined after each addition. In another bowl combine the flour, salt and baking soda. Gradually add the flour mixture to the peanut butter batter, mixing as you are adding. Mix until everything is thoroughly combined. Roll the dough into small balls about the size of a half dollar. Place the cookie balls onto a lightly greased cookie sheet. Press the balls flat in a cris-cross pattern with a fork. Bake at 375°F for 10-12 minutes or until the cookies just begin to turn a light shade of brown around the edge. Remove from oven and let cool for 2 or 3 minutes before removing cookies from baking sheet to a cooling rack. Makes about 60 really great peanut butter cookies.
